Risotto Base

Warm the stock

Put the chicken or seafood stock in a saucepan and keep it at a gentle simmer over low heat. Maintain it warm throughout the cooking.

Sauté aromatics

In a heavy-bottomed sauté pan or shallow saucepan, heat 1 tablespoon olive oil and 1 tablespoon butter over medium heat. Add the minced shallot and cook until translucent, about 2–3 minutes. Add the minced garlic and cook 30 seconds until fragrant, taking care not to brown.

Toast the rice

Add the arborio rice to the aromatics and stir to coat with the fat. Cook, stirring constantly, for 1–2 minutes until the edges of the rice become translucent and a faint nutty aroma develops.

Deglaze with wine

Pour in the white wine and stir until mostly absorbed by the rice, scraping any browned bits from the pan. Reduce heat to medium-low.

Cook the risotto

Add 1/2 cup of the warm stock and stir steadily until nearly absorbed. Continue adding stock in 1/2-cup increments, stirring frequently and allowing the rice to absorb most liquid before adding more. This process takes about 18–22 minutes. Taste after 16 minutes — the rice should be creamy and al dente (slightly firm to the bite).

Finish and season

When the rice is creamy and cooked through, remove from heat and stir in 2 tablespoons butter, grated Parmigiano-Reggiano, lemon zest, 1 tablespoon olive oil, salt, and pepper. Adjust seasoning to taste. Cover and let rest 1 minute while preparing the crab topping.

Crab & N’duja Topping

Prepare n’duja butter

In a small saucepan or skillet over low heat, melt 1 tablespoon butter with the n’duja, stirring until the n’duja becomes a smooth, spreadable sauce. Keep heat low to avoid separating the fats.

Combine crab with n’duja

Add the picked crab meat to the n’duja mixture and gently fold to coat, using a spatula to avoid breaking up the lumps. Warm gently for 1–2 minutes until just heated through. Off heat, stir in 1 tablespoon fresh lemon juice and 1/4 teaspoon sea salt; taste and adjust seasoning. Reserve a few attractive lumps of lump crab for plating.

Kumquat Relish & Garnish

Make kumquat relish

Combine the thinly sliced kumquats (remove any seeds), minced shallot, honey, rice wine vinegar, 1 teaspoon olive oil, and chopped chives in a small bowl. Stir and let rest 5–10 minutes so flavors marry. Taste and adjust: add a touch more honey if too tart or a few drops of vinegar if too sweet.

Prepare garnish

If using microgreens or frisée, lightly dress with a drop of olive oil and a pinch of salt. Keep ready for plating.

Plating & Finishing

Plate the risotto

Divide the risotto among 4 warmed shallow bowls (about 3/4 cup risotto per serving). Create a small well in the center of each portion.

Top with crab and n’duja

Spoon the warm n’duja-coated crab into the wells, placing reserved lump pieces on top for presentation. Allow a small ribbon of the n’duja butter to streak across the risotto for visual interest.

Add kumquat relish and garnish

Spoon a teaspoon or two of kumquat relish beside the crab or lightly over the crab to add brightness and acidity. Scatter the microgreens or frisée and a sprinkle of chopped parsley around the dish.

Final season and serve

Finish each plate with a light drizzle (about 1/4 teaspoon) of extra-virgin olive oil, a final grind of black pepper, and an optional small pinch of flaky sea salt on the exposed crab. Serve immediately so the risotto is creamy and hot.
