Method
Oysters
Chill and prepare serving platter
Fill a shallow serving platter or rimmed tray with crushed ice or a layer of rock salt to stabilize oysters. Place lemon wedges on the side. Keep oysters cold in refrigerator until ready to shuck.
Clean oysters
Rinse oyster shells under cold running water and scrub any debris with a brush. Discard any oysters with cracked shells or an off smell.
Shuck oysters
Using an oyster knife and wearing a towel or glove, hold the oyster flat side up. Insert the tip of the knife at the hinge, twist gently to pop it open. Run the knife along the top shell to cut the muscle and remove the top shell. Slide the knife under the oyster to detach the bottom muscle, preserving the liquor in the shell. Place each shucked oyster on the ice-lined platter immediately.
Keep oysters chilled
As you shuck, keep oysters on the crushed ice to maintain temperature. Taste and discard any oyster with an unpleasant odor or texture.
Cucumber Mignonette
Prepare cucumber
Peel half an English cucumber if the skin is waxy; finely dice into 2–3 mm pieces. Transfer to a small bowl and lightly salt (about 1/8 tsp). Let sit 5 minutes, then gently press or drain any excess liquid with a paper towel so the mignonette isn't watery.
Combine dressing
Add 3 tablespoons champagne vinegar, 1 teaspoon rice vinegar (optional), 1/2 teaspoon sugar, 1/2 teaspoon coarse sea salt, and 1/4 teaspoon freshly ground black pepper to the cucumber and shallot. Stir to combine. If using, whisk in 1 teaspoon extra-virgin olive oil for a smoother mouthfeel. Taste and adjust seasoning — it should be bright and slightly acidic to complement the oysters.
Finish
Stir in 1 tablespoon finely chopped fresh dill or chives. Let the mignonette rest 5–10 minutes to allow flavors to meld, then give a final stir before serving.
Assemble & Serve
Arrange the chilled, shucked oysters on the ice-lined platter. Spoon about 1/2 to 1 teaspoon of cucumber mignonette onto each oyster (or serve the mignonette in a small bowl for guests to spoon themselves). Place lemon wedges alongside for guests who prefer a squeeze of lemon instead.
