Boil pasta
Bring a large pot of water to a rolling boil. Add a generous pinch of coarse kosher salt. Add 12 oz linguine and cook until very al dente — about 1 to 2 minutes less than package instructions (usually 8–9 minutes total). Reserve 1 1/2 cups of pasta cooking water, then drain the pasta and set aside.
Finish and toss
When sauce is ready, add the drained linguine to the skillet with sauce. Add 1 tbsp butter, 2 tbsp extra-virgin olive oil, half of the chopped parsley, and 1/2 to 1 cup of reserved pasta water as needed to loosen and emulsify the sauce. Toss vigorously over low-medium heat for 1–2 minutes until pasta is glossy and coated. Taste and adjust seasoning with salt and freshly ground black pepper. Stir in lemon zest if using and the remaining parsley just before serving.

Prepare clams
If using fresh clams: rinse and scrub shells under cold running water to remove grit. Discard any clams with cracked shells or that do not close when tapped. If using canned clams, drain and reserve the juice; set clams aside.
Sweat aromatics
In a large wide skillet or sauté pan, heat 2 tbsp extra-virgin olive oil over medium heat. Add the finely minced shallot and cook, stirring, until softened and translucent, about 2 minutes. Add the thinly sliced garlic and 1 tsp red pepper flakes and cook another 30–45 seconds until fragrant but not browned (avoid burning garlic).
Deglaze and build sauce
Pour in 1 cup dry white wine and 1 cup clam juice (or 1 cup low-sodium broth + reserved clam juice if using canned). Increase heat to medium-high and let the liquid come to a simmer and slightly reduce for about 2–3 minutes to concentrate flavor.
Cook clams
Add the clams to the simmering liquid, cover the skillet with a tight lid, and steam until clams open, 5–7 minutes for fresh littlenecks. Shake the pan occasionally. Discard any clams that remain tightly closed after steaming. If using canned clams, add them during the last 1–2 minutes of simmering just to heat through (do not overcook).
Finish sauce
Remove the lid. Add 2 tbsp fresh lemon juice and up to 1 cup reserved pasta water or broth to adjust sauce volume and consistency. Stir in 1 tbsp unsalted butter off heat to enrich the sauce and help emulsify. Taste the sauce and add salt if needed and freshly ground black pepper to taste.
