Prepare and Dry the Wings

Pat dry

Pat the chicken wing sections very dry with paper towels. Removing surface moisture helps achieve maximum crispness.

Place wings in a large bowl. Sprinkle evenly with baking powder, 1 tsp fine salt, 1 tsp black pepper, 1 tsp garlic powder, and 1 tsp onion powder. Toss thoroughly so each piece is lightly and evenly coated with the baking powder mixture.

Arrange coated wings on a wire rack set over a baking sheet and refrigerate, uncovered, for 30–60 minutes if time allows. This further dries the skin for a crispier finish.

Cook the Wings

Heat neutral oil in a deep skillet or heavy pot to 350°F (175°C). Fry wings in batches, without crowding, for 8–10 minutes per batch until skin is deep golden and internal temperature reaches 165°F (74°C). Remove with a slotted spoon and drain on paper towels or a wire rack.

Oven alternative (if not frying)

Preheat oven to 450°F (230°C). Line a baking sheet with foil and place a wire rack on top. Brush or mist wings lightly with oil. Bake 25–35 minutes, turning once, until skin is deeply browned and crisp. Optional: finish under the broiler for 2–4 minutes to further crisp, watching carefully to avoid burning.

Make Hot Honey Agridolce Sauce

In a small saucepan over medium-low heat, melt 1 tbsp butter. Add minced garlic and sauté 30–45 seconds until fragrant but not brown.

Add 1/2 cup honey, 3 tbsp apple cider vinegar, 1 tbsp soy sauce, 2 tbsp water, 1 tsp red chili flakes, 1 tbsp lemon juice, 1/4 tsp salt, and 1/8 tsp black pepper. Stir to combine.

Bring mixture to a gentle simmer and cook 3–5 minutes, stirring occasionally, until slightly reduced and syrupy. Taste and adjust: add more vinegar for tang, more honey for sweetness, or more chili flakes for heat. Keep warm on the lowest heat.

Toss and Finish

Place cooked wings in a large clean mixing bowl. Pour warm hot honey agridolce sauce over the wings and toss gently but thoroughly so each wing is glazed evenly. Work in batches if necessary to avoid overcrowding and sogginess.

Transfer glazed wings to a serving plate. Sprinkle chopped parsley, lemon zest, and optional sesame seeds over top. Serve immediately with extra sauce on the side if desired.
