Method
Blanched Broccoli Rabe
Prepare and trim
Trim the broccoli rabe: cut off any very tough stems (about 1/2–1 inch) and separate large stems from leaves if extremely thick. Leave stems and leaves in similar-sized pieces so they cook evenly.
Bring water to a boil
Bring 2 liters (approx. 8 cups) of water to a rolling boil in a large pot. Add 1 tablespoon coarse salt to the water to season and help preserve color.
Blanch
Working quickly, add the broccoli rabe to the boiling salted water. Blanch until bright green and just tender, 1 1/2 to 3 minutes depending on stem thickness. Test a stem to ensure it is tender-crisp, not mushy.
Shock in ice bath
Immediately transfer the broccoli rabe to a large bowl of ice water (about 2 cups ice in cold water) using tongs or a slotted spoon to stop cooking and set the green color. Chill for 1–2 minutes.
Drain and squeeze
Drain the cooled broccoli rabe in a colander, then gently press or squeeze out excess water with hands or a clean kitchen towel. If desired, chop into 2–3 inch lengths for easier serving.
Garlic-Chili Dressing
Add chili
Stir in 1 teaspoon crushed red pepper flakes and cook with the garlic for 15–20 seconds to release the chile's aroma.
Finish dressing
Remove the pan from heat and stir in 1 tablespoon fresh lemon juice, 3 teaspoons fine sea salt, and 1/2 teaspoon freshly ground black pepper. Allow the warm oil to sit for 30–60 seconds to meld flavors.
Finish & Serve
Toss broccoli rabe with dressing
Place the drained broccoli rabe in a serving bowl. Pour the warm garlic-chili oil and any accumulated pan juices over the broccoli rabe and toss thoroughly to coat. Taste and adjust seasoning, adding more salt, pepper, or lemon juice as desired.
Add finishing touches
Drizzle the final 1 tablespoon extra-virgin olive oil over the dressed broccoli rabe. If using, sprinkle 2 tablespoons toasted pine nuts or chopped toasted almonds and 1/2 teaspoon lemon zest on top for brightness and texture.
Serve
Serve warm, at room temperature, or chilled as a side salad. Leftovers keep refrigerated in an airtight container for up to 3 days.
