Prepare chili oil

Warm the extra-virgin olive oil and red pepper flakes together in a small saucepan over low heat for 3–4 minutes until fragrant but not smoking. Remove from heat and let the oil steep while you prepare pizzas. Strain into a small jar if you prefer a clear oil, or leave flakes in for presentation. Keep warm or at room temperature for serving.

Prepare spicy honey

If using store-bought spicy honey, transfer 4 tablespoons to a small serving dish. To make your own, gently warm 4 tablespoons of honey with 1 teaspoon of crushed red pepper flakes in a small pan for 30–60 seconds, then cool slightly and transfer to a serving dish. Label as 'spicy honey' for guests to drizzle.

Seasonings and cheese

Place flaky sea salt, freshly ground black pepper, grated Pecorino/Parmesan, and optional chili-infused olive oil in small bowls for the table. Arrange the spicy honey and chili oil so guests can choose to drizzle over slices. Keep everything within easy reach of the pizzas.

Serve the chili oil, spicy honey, flaky salt, pepper, and grated cheese alongside the pizzas. Indicate which pizzas pair well with spicy honey (spicy honey pairs particularly well with the spicy honey pizza and upside-down styles) and which benefit from a drizzle of chili oil (Margherita and DOP).
