Pork Sobrasada

Prep the meat
Chill the ground pork and pork fat briefly so they are cold but pliable (20–30 minutes). This helps with texture during mixing and spreading.

Mix spices
In a bowl combine sweet smoked paprika, hot smoked paprika, sea salt, black pepper, ground cumin, light brown sugar and chile flakes (if using).

Combine
Place cold ground pork and diced pork fat in a large bowl. Add minced garlic and the dry spice mix. Pour in the red wine. Using a sturdy spoon or your hands (wear gloves), mix thoroughly until the spices and liquid are evenly distributed and the mixture becomes pasty and cohesive, about 3–5 minutes.

Membrillo (Quince Paste)

Cook quince
Place chopped quince, water and lemon juice in a medium saucepan. Bring to a simmer over medium heat, cover, and cook until quince is very soft, about 20–25 minutes. If necessary add a little extra water to prevent sticking.

Puree
When quince is tender, puree in the pot with an immersion blender or transfer to a blender and blend until completely smooth.

Add sugar and reduce
Measure the quince purée (about 2 cups) and return to a clean saucepan. Add equal weight (or approximately equal volume — here 1 cup sugar for 2 cups cooked quince will give a slightly less firm paste) of granulated sugar. Cook over low–medium heat, stirring frequently, until the mixture thickens, darkens and pulls away from the sides of the pan — about 30–45 minutes. A wooden spoon should leave a clear trail on the bottom. Stir to avoid burning.

Set
Once very thick, pour the hot membrillo into a lightly oiled small baking dish or mold lined with parchment. Smooth the top, cover with plastic wrap touching the surface, and let cool to room temperature, then refrigerate until fully set (4 hours or overnight). When firm, cut into small slices or wedges to serve with the sobrasada.
Honeycomb (Candied Honeycomb Toffee)

Prepare pan
Line a small baking sheet or shallow dish with parchment and lightly oil it. Have the baking soda sifted and ready near the stove. Also have the mild honey measured for finishing.

Cook sugar syrup
In a heavy-bottomed small saucepan combine 1 cup granulated sugar, 2 tbsp light corn or golden syrup and 2 tsp water. Stir gently over medium heat until sugar dissolves. Then stop stirring and let the mixture boil steadily until it reaches 295–300°F (glass stage) or until it is a deep amber (about 4–6 minutes). If you do not have a thermometer, watch for an even amber color — be careful not to burn.

Add baking soda
Remove the pan from heat and quickly whisk in the sifted baking soda in one go. The mixture will foam and turn lighter in color — continue whisking briefly to distribute. Immediately pour the foaming honeycomb onto the prepared parchment and allow to spread; do not spread with a utensil. Let cool and harden completely (about 20–30 minutes).

Assembly & Serving

Bring the chilled sobrasada to near serving temperature by removing from the refrigerator 20–30 minutes before plating so it becomes soft and spreadable.

Toast slices of country bread or arrange crackers. Spread a generous layer of pork sobrasada on each toast or cracker.

Top some bites with a thin slice of membrillo; for contrast top other bites with a shard of honeycomb. You can also combine both on a single bite—sobrasada, a small sliver of membrillo, and a tiny shard of honeycomb for crunch and honeyed brightness.

Garnish with microgreens or a sprinkle of chopped parsley if desired, and serve immediately.
