    Bring all ingredients to room temperature: remove eggs, sea urchin, and cream from the refrigerator 15–20 minutes before cooking. Toast walnuts in a dry skillet over medium heat, shaking the pan until fragrant and lightly browned, 3–5 minutes. Roughly chop and set aside.

    If your sea urchin arrives cold on ice or frozen, gently pat dry with paper towel and let it warm slightly so it is soft but still chilled. Reserve one small piece (about 15 g) for garnish if desired.

Make the Creamy Eggs

    Whisk eggs and cream

    In a medium bowl, whisk together the eggs, heavy cream, salt, and black pepper until fully combined and lightly aerated (about 20–30 seconds).

    Low-temperature cooking

    Place a nonstick skillet over low heat and add the unsalted butter. Once the butter has melted and foam subsides but not browned (about 30–45 seconds), pour in the egg mixture. Using a silicone spatula, stir constantly, scraping the bottom and sides in a slow folding motion. Keep the heat very low so the custard coagulates gently; this should take about 6–8 minutes until the eggs are soft, glossy, and just set but still slightly runny—remove from heat a touch earlier as residual heat will continue to cook them.

    Finish the texture

    When the eggs reach a creamy consistency, take the pan off the heat and fold repeatedly for 30 seconds to stabilize the texture. Taste and adjust seasoning with a pinch more salt if needed.

Prepare Sea Urchin & Anchovy Oil Finish

    In a small bowl, gently mash most of the sea urchin with the back of a spoon until smooth but still slightly textured. Stir in the ancient anchovy oil and lemon juice to combine. Reserve a few whole or larger pieces of uni for garnish if you set some aside earlier.

    If anchovy oil is especially salty or assertive, start with 1/2 teaspoon and taste, then add more up to the listed amount to reach a balanced briny richness.

Assemble & Garnish

    Divide the creamy eggs among 4 warmed plates or shallow bowls. Spoon the sea urchin and anchovy oil mixture over the center of each portion, leaving some eggs visible at the edges so the uni sits like a glossy mound.

    Scatter the toasted chopped walnuts over and around the eggs to add crunch and a toasty, bitter note that balances the richness.

    Sprinkle the finely snipped chives and optional microgreens over each plate. Place reserved uni pieces on top as an eye-catching garnish.
