Lamb and Marinade
Marinate lamb
In a large bowl combine 3 tbs olive oil, minced garlic, ground cumin, coriander, cinnamon, ginger, paprika, turmeric, 1.5 tsp salt and 1 tsp pepper. Add lamb pieces and toss to coat thoroughly. Cover and refrigerate for at least 1 hour or up to overnight to develop flavor.

Prepare eggplant
While lamb marinates, salt the cubed eggplant lightly and place in a colander for 20–30 minutes to draw out bitterness. Rinse and pat dry thoroughly with kitchen paper. This step improves texture and reduces oil absorption.

Braising the Tagine
Brown the lamb
Heat a heavy-bottomed pot or tagine base over medium-high heat. Add the marinated lamb (reserve marinade) in a single layer and brown on all sides, 6–8 minutes. Work in batches if necessary to avoid crowding. Remove browned lamb and set aside.
Cook aromatics
Reduce heat to medium, add the sliced onion to the pot and sauté in 1 tbs olive oil until soft and beginning to brown, 6–8 minutes. Add the carrots and cook 2–3 minutes. Stir in the reserved marinade, tomato paste and chopped tomatoes. Cook for 3–4 minutes until tomatoes begin to break down.
Deglaze and combine
Pour in the white wine (if using) to deglaze the pot, scraping up browned bits from the bottom. Add the browned lamb back to the pot along with the stock. Bring to a gentle simmer, cover, and reduce heat to low.
Braise
Simmer gently, covered, until the lamb is tender, about 1 hour 30 minutes. Check after 1 hour: if liquid has reduced too much, add up to 100 ml more stock or water. The lamb should be fork-tender when done.
Assembly & Finish
Add eggplant and finishing ingredients
When the lamb is tender, gently fold the fried eggplant cubes, sliced preserved lemon rind and green olives into the braise. If using honey or pomegranate molasses, stir in now to balance acidity and add a touch of sweetness. Simmer uncovered for 10–12 minutes to allow flavors to meld and sauce to thicken slightly.
Adjust seasoning
Taste and adjust salt and pepper as needed. If sauce is too sharp, add a little more honey or a splash of stock.
