Brown the lamb
Heat 1 tablespoon olive oil in a large heavy pot or Dutch oven over medium-high heat. Pat lamb cubes dry and season lightly with 1/4 tsp salt and 1/8 tsp pepper. Working in batches if needed to avoid overcrowding, brown lamb pieces about 3–4 minutes per side until well seared. Transfer browned lamb to a plate and set aside.
Sauté aromatics
Reduce heat to medium and add remaining 1 tablespoon olive oil to the pot. Add chopped onion and a pinch of salt; sauté until translucent, about 5 minutes. Add minced garlic and cook 30 seconds until fragrant.
Toast spices and build sauce
Stir in ground cumin, ground coriander, paprika and cinnamon; cook 30–45 seconds to bloom the spices. Add tomato paste and cook 1 minute, stirring so the paste darkens slightly.
Simmer with broth
Return browned lamb to the pot. Pour in 3 cups broth, scraping up any browned bits from the bottom. Add remaining 1 tsp salt and 1/2 tsp black pepper. Bring to a gentle simmer, then reduce heat to low, cover partially, and simmer gently for 35 minutes to tenderize the lamb.

Add remaining vegetables and chickpeas
Add the zucchini, red bell pepper, and drained chickpeas to the pot. Stir gently to combine, cover, and simmer another 8–10 minutes until all vegetables are tender but not mushy and lamb is fully tender. Taste the broth and adjust seasoning with a pinch more salt or pepper if needed.

Assemble and garnish: Taste the lamb and vegetable stew for final seasoning. Spoon couscous onto a large serving platter or individual plates. Make a shallow well in the couscous and ladle the lamb and vegetable mixture over the top so some broth soaks into the grains. Scatter chopped cilantro or parsley over the dish, sprinkle toasted almonds or pine nuts if using, and serve with lemon wedges on the side for squeezing.
Optional resting: Let the assembled dish rest 5 minutes so flavors meld before serving. Leftovers keep covered in the refrigerator for 2–3 days; reheat gently on the stovetop.
