Ranchero Sauce
Add chopped roma tomatoes (2.5 cups) and 1 chopped jalapeño. Cook, stirring occasionally, until the tomatoes begin to break down, about 6–8 minutes.
Stir in 1/2 cup broth, 1/2 tsp ground cumin, 1/2 tsp dried oregano, 1 tsp salt and 1/2 tsp black pepper. Reduce heat to medium-low and simmer until sauce thickens slightly, about 8–10 minutes.
Pico de Gallo

While sauce simmers, rinse diced potatoes and pat dry. Heat 2 tbs vegetable oil in a large skillet over medium-high heat until shimmering.
Add potatoes in a single layer, season with 1/2 tsp onion powder, 1/2 tsp smoked paprika, 3/4 tsp salt and 1/2 tsp black pepper. Cook, stirring occasionally, until golden and tender, about 12–15 minutes. Reduce heat if they brown too quickly.
Taste and adjust seasoning. Keep warm and cover until ready to serve.
Eggs & Assembly
Warm tortillas briefly in a dry skillet or in the oven (optional). This recipe makes 4 servings; plan one tortilla per person if using.
In a large nonstick skillet, melt 1 tbs butter over medium heat. Crack 4 large eggs into the skillet (or cook in two batches). Season each egg with a pinch of salt and pepper (use the 1/4 tsp each reserved). Fry until whites are set but yolks remain runny, about 3–4 minutes for sunny-side up. For over-easy, flip carefully and cook 30–45 seconds more.
Top each egg with about 2–3 tbs pico de gallo and sprinkle with 1 tbsp crumbled queso fresco/cotija and a few cilantro leaves (use the 2 tbs garnish). Serve with a side of house potatoes (about 1/2 cup per serving).
Serve immediately so yolks remain runny and sauce is warm.
