Method

Pickled red onion

Prepare the quick pickle: in a small saucepan combine apple cider vinegar, water, sugar, and 0.5 tsp salt. Bring to a simmer over medium heat until sugar dissolves (about 2 minutes).

Place the thinly sliced red onion in a heatproof jar or bowl and pour the hot pickling liquid over the onions. Press down so onions are submerged. Let cool to room temperature, then refrigerate at least 30 minutes (can be made several hours ahead).

Guacamole

Halve and pit avocados, scoop flesh into a bowl. Mash with a fork to desired texture.

Add lime juice, 0.75 tsp salt, chopped cilantro and minced jalapeño (if using). Taste and adjust salt or lime as needed. Keep refrigerated until assembly.

Season fillings

In a medium bowl combine shredded chicken (or chosen meat), cooked rice, refried beans, 1.5 cups shredded cheese, 1 tsp salt, 0.5 tsp pepper, 0.5 tsp cumin and 0.25 tsp garlic powder. Mix until even. If using a pre-seasoned meat, reduce added salt to taste.

Assemble rolls

Lay one flour tortilla flat. Spread about 3 tablespoons of the bean-rice-meat mixture in a line down the center, leaving 1 inch clear at the edges. Sprinkle about 2 tablespoons of shredded cheese on top of the filling. Fold the sides of the tortilla in toward the center, then roll tightly from one end to the other to form a sealed cylinder. Place seam-side down on a tray. Repeat with remaining tortillas and filling (should make about 6 rolls).

Heat oil

In a heavy deep skillet or Dutch oven, pour enough oil to reach 1 to 1.5 inches up the side (about 1.5 cups depending on pan). Heat oil over medium-high until it reaches 350°F (175°C) or a small breadcrumb sizzles and browns in about 20–30 seconds.

Fry rolls

Working in batches to avoid overcrowding, carefully add 2–3 chimichanga rolls seam-side down to the hot oil. Fry, turning occasionally with tongs, until golden brown and crisp on all sides, about 2.5–4 minutes per roll depending on size. Use tongs to keep seam sealed. Transfer to a wire rack or paper towel-lined plate to drain. Let rest 1–2 minutes—filling will be hot.

Sour cream drizzle & finishing

Make sour cream drizzle: whisk sour cream with 1 tablespoon milk or water until pourable but still creamy. Taste and thin further if needed.

To serve: place 1 chimichanga roll on each plate (or 2 for a larger portion). Spoon or pipe guacamole and pickled red onion alongside or atop. Drizzle with thinned sour cream and sprinkle remaining 0.5 cup shredded cheese (optional) and chopped cilantro. Serve with lime wedges.

Safety note: let rolls cool slightly before eating; filling will retain heat. Leftovers can be reheated in an oven at 350°F (175°C) for 10–12 minutes to re-crisp.
