Prepare chips

If using fresh tortillas: stack and cut into 8 wedges each to yield about 6 cups. Heat 1 to 1 1/2 inches vegetable oil in a heavy skillet over medium-high heat to 350°F (175°C). Fry tortilla wedges in batches until golden and crisp, 30–60 seconds per side. Drain on paper towel and season immediately with 1 tsp kosher salt. If using store-bought chips, toss chips gently with 2 tbs vegetable oil and 1/2 tsp salt in a large bowl and spread on a sheet to crisp in a 375°F oven 6–8 minutes, watching closely.

Warm salsas

Pour salsa roja into a small saucepan and warm over low heat until simmering gently, about 3–4 minutes. Keep covered and warm. Repeat with salsa verde in a separate saucepan. Keep both sauces at a gentle simmer; you will use both to create the Bandera presentation (half-and-half or layered).

Cheese Blend & Queso

Prepare cheese blend

Combine the shredded Monterey Jack and shredded Oaxaca cheese in a bowl and toss lightly to blend. Set aside 1/4 cup of the blend for final melting/browning if desired.

Heat and/or stuff queso

If using a meltable block queso (queso asado or similar), slice into 8 pieces. Heat a small nonstick skillet over medium heat with 1 tbs butter. Add slices and sear 1–2 minutes per side until golden and slightly melted inside, or warm through on low until softened. Alternatively, place the queso pieces on a baking sheet under a hot broiler 1–2 minutes to blister. Keep warm and ready for plating.

Assemble Chilaquiles

In a large sauté pan or skillet (12-inch preferred), warm a thin layer of each salsa on opposite sides (or combine to create a half-red/half-green layout). Add the prepared chips in a single even layer and gently fold them into the sauce for 30–60 seconds so chips are well-coated but still retain some crunch. Work quickly so chips do not become soggy. Taste and adjust seasoning with a pinch of salt if needed.

Sprinkle the cheese blend evenly over the sauced chips. Cover the skillet with a lid for 1–2 minutes or transfer briefly to a 375°F oven for 1–2 minutes to melt the cheese. Remove lid/oven when cheese is melted and slightly gooey; you want melted, not fully crisped, cheese.

Nestle the warmed/ seared queso pieces into the chilaquiles (either placed on top or slightly stuffed within the chips) so each serving gets an oozing piece of queso. Spoon a little extra warm salsa around to make the banderas effect if desired.

Eggs & Finishing

Fry or cook eggs

In a separate nonstick skillet, melt 1 tsp butter over medium-low heat. Crack eggs and fry sunny-side up to desired doneness (about 2–3 minutes for runny yolk; cover 30–45 seconds for slightly set whites). Season with a pinch of salt and 1/4 tsp black pepper. Alternatively, scramble eggs softly and portion over the chilaquiles if you prefer.

Plate and garnish

Divide the chilaquiles between 2 plates. Top each portion with 2 fried eggs and place the seared queso pieces so they are visible. Drizzle 2 tbs crema (or 1 tbs each plate) over the top in a thin ribbon. Sprinkle crumbled cotija evenly over the top, then scatter thinly sliced onion (if using), chopped cilantro, and microgreens. Finish with a light drizzle of chile oil or hot sauce if you like more heat and a squeeze of lime over each serving.

Serve

Serve immediately while cheeses are melty and chips retain some crunch. Provide extra salsa roja and salsa verde on the side for guests to add more, and additional cotija and lime wedges.
