Prepare the Pineapple
Carefully cut the top off the fresh pineapple and scoop out the flesh, leaving enough of the walls to create a bowl.
Blend the Ingredients
In a blender, combine the coconut cream, pineapple juice, ice cubes, and the flesh of the pineapple you scooped out. Blend until smooth.
Serve the Drink
Pour the blended mixture back into the carved pineapple. Garnish with maraschino cherries and fresh mint leaves.
