Prepare chicken
Season the chicken breasts with 1/2 tsp salt and 1/4 tsp black pepper. In a large skillet over medium-high heat, add olive oil and 1 tbs butter. When shimmering, sear chicken 2–3 minutes per side until golden but not fully cooked. Remove to a plate and let rest; reserve juices in the pan.
Deglaze and build sauce
If using, pour the white wine into the pan to deglaze, scraping up browned bits; simmer until mostly evaporated, about 1–2 minutes. Sprinkle 3 tbs flour over the vegetables and stir to coat, cooking 1–2 minutes to remove raw flour taste.
Simmer filling
Gradually whisk in 1 cup chicken stock, ensuring a smooth sauce. Add 3/4 cup heavy cream, chopped thyme, remaining 1/2 tsp salt, and 1/4 tsp black pepper. Return the seared chicken (with any accumulated juices) to the skillet. Reduce heat to low, cover, and simmer 8–10 minutes until chicken is cooked through (internal temp 165°F / 74°C). Remove chicken, shred or dice into bite-sized pieces, and return to the sauce. Stir in frozen peas and 2 tbs chopped parsley. Adjust seasoning to taste. Allow filling to cool slightly (10–15 minutes) before assembling; a thicker filling sets better under the crust.

In a medium bowl, whisk together 1 3/4 cups flour and 1/2 tsp salt. Toss in cold diced butter and, using a pastry cutter or fingertips, work the butter into the flour until mixture resembles coarse peas with some larger butter bits remaining for flakiness (about 6–8 minutes).
Assemble & Bake
Spoon the cooled filling into a 9-inch pie dish (or four 6-inch individual dishes). Mound slightly in center to allow for even coverage by the crust.
Bake on a sheet tray in the preheated 400°F (200°C) oven for 25–30 minutes, or until crust is deep golden and filling is bubbling at vents. If edges brown too quickly, tent loosely with foil for the last 10 minutes.
Remove from oven and let rest 10 minutes to set before serving. This helps the gravy thicken slightly and makes slicing easier.
Garnish & Finish
Just before serving, drizzle 1/2 tsp black truffle oil evenly over the top of the pie. If using truffle peelings or thin mushroom slices, scatter them over the pie for visual and aromatic impact.
Sprinkle 1 tbs chopped fresh parsley over the pie. Serve warm, slicing into 6 wedges. Provide extra truffle oil at the table for diners who want a stronger aroma.
