Orange Shortbread Crust
Prepare and blind-bake crust
Preheat oven to 350°F (175°C). Lightly butter and line a 9x9-inch square baking pan with parchment, leaving an overhang. In a bowl of a food processor, pulse the cold cubed butter, 1/2 cup sugar, and orange zest until butter is cut into pea-size pieces. Add flour, salt, and vanilla extract and pulse until mixture starts to come together and holds when pinched. Transfer mixture to prepared pan and press evenly into the bottom and slightly up the sides to form a uniform crust about 1/4–1/2-inch thick. Dock with a fork. Chill 15 minutes. Line crust with parchment and fill with pie weights or dried beans. Bake 18–22 minutes until edges set and lightly golden. Remove weights and parchment and bake another 6–8 minutes until golden and cooked through. Let cool slightly while preparing curd.
Fresh Lemon Curd Filling
Make lemon curd
Reduce oven temperature to 325°F (160°C) if needed for later steps; curd is cooked on stovetop. In a medium heatproof bowl whisk together whole eggs, egg yolks, and 3/4 cup sugar until combined. Whisk in lemon juice, lemon zest, and a pinch of salt. Set a medium saucepan with about 1–2 inches of water over medium heat to make a simmer for a double boiler. Place bowl over simmering water (making sure bottom of bowl doesn't touch water). Cook the mixture, whisking constantly, until it thickens and registers 170–175°F (77–80°C) on an instant-read thermometer and coats the back of a spoon, about 8–12 minutes. Remove from heat and whisk in the butter, a tablespoon at a time, until fully incorporated and smooth. Strain curd through a fine sieve into a clean bowl to remove any cooked egg or zest if desired. Pour the hot lemon curd over the baked shortbread, smoothing into an even layer. Return to oven and bake 8–10 minutes at 325°F (160°C) just to set the curd slightly (center should still be slightly wobbly). Remove and cool to room temperature, then refrigerate at least 2 hours (preferably 3-4 hours) until firm.
Vanilla Bean Meringue & Flambé Finish
Prepare meringue
When curd is chilled and just before serving, make the meringue. Ensure mixer bowl and whisk are completely clean and dry. In the bowl of a stand mixer fitted with the whisk attachment, combine 4 egg whites, cream of tartar, and salt. Start whisking at medium speed until frothy. Gradually add 3/4 cup sugar in a slow, steady stream while increasing speed to high. Whisk until glossy stiff peaks form and sugar is fully dissolved (rub a little between fingers to check for grit). Fold in vanilla bean paste or scraped seeds gently to distribute.
Assemble and torch
Spoon or pipe the meringue over the chilled lemon bars, making peaks and swirls to create surface area for flambéing. If desired, sprinkle a light dusting (about 1 tbsp) of additional granulated sugar over the meringue for extra caramelization. Option A (safe and controlled indoor flambé with torch): Using a kitchen torch, carefully brown the meringue evenly until peaks are golden. Option B (classic flambé with liqueur): In a long-handled metal ladle, warm 1/4 cup Grand Marnier over low heat until warm (do not boil). Ignite the liqueur with a long match or long-reach lighter and pour the blue flame carefully over the meringue, moving quickly to toast the surface; or pour the flaming liqueur into the ladle and pass over the meringue to transfer flame. Extinguish flame naturally; do not pour flaming liquid into pan. Repeat briefly if stronger caramelization is desired. NOTE: Flambéing is optional and should be done with caution — keep a fire extinguisher nearby and do not attempt under an overhead fan.
Finish and serve
Allow the meringue to rest 2–3 minutes until flame is fully out and any hot alcohol has dissipated. Slice into 9 or 12 bars using a hot, dry knife (dip in hot water and dry between cuts for clean edges). Garnish each bar with a small strip of orange zest or a light dusting of powdered sugar if desired. Serve immediately so meringue is warm and slightly toasted, or serve at room temperature.
