Prepare Fruit & Purée

Make sure kiwi is ready

Peel and cut 1 fresh, ripe kiwi into roughly 6–8 chunks. Reserve one thin wheel or slice for garnish and set aside.

Lavender purée note

If you don't have pre-made lavender purée, you can quickly make a small batch: simmer 1/2 cup water with 1/2 cup sugar and 1 tablespoon dried culinary lavender for 5 minutes, steep 10 minutes off heat, strain, cool and combine 1 part syrup with 1 part strained fresh lavender-infused puree of softened white peach or apricot to approximate texture. Use 0.5 oz of finished purée in the cocktail recipe.

Muddling & Mixing

Place the kiwi chunks into a sturdy cocktail shaker or a mixing glass. Add the lavender purée and optional 0.25 oz simple syrup only if your kiwi isn't very ripe or you prefer slightly sweeter balance.

Lightly muddle the kiwi and purée together until the fruit is broken down and releases juices but not pulverized into bits — about 6–8 gentle presses. This releases fresh kiwi flavor and integrates with the lavender purée.

Add 2 oz DonQ rum, 0.75 oz Bauchant orange liqueur, and 0.75 oz fresh-pressed lime juice to the shaker with the muddled kiwi mixture.

Fill the shaker with ice (about 6 oz). Secure the lid and shake vigorously for 10–15 seconds until the outside of the shaker is very cold and slightly frosted. The vigorous shake properly chills, dilutes, and integrates the textured kiwi with the spirits.

Strain & Serve

Double-strain the cocktail into a chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer to catch kiwi solids and lavender bits. Double-straining yields a silky texture.

If you prefer a slightly more textured drink, you may single-strain into an ice-filled rocks glass instead.

Garnish with the reserved kiwi wheel on the rim and, if desired, a tiny sprig of lavender and/or a dehydrated lime wheel or twist for aroma. Serve immediately.
