Prepare fruit
If using peaches: peel (blanch 30–60 seconds in boiling water then plunge into ice water), pit and slice into 1/2-inch slices until you have about 5 cups. If using apples: peel, core and slice 1/4-inch thick (use firm baking apples like Honeycrisp or Granny Smith). If using mixed berries: rinse and drain well; measure 5 cups total.
Mix filling
In a large bowl combine the sliced fruit, 1 cup granulated sugar, 1/4 cup packed brown sugar, 2 tablespoons cornstarch, 1 tablespoon lemon juice, 1 teaspoon vanilla extract, 1/2 teaspoon ground cinnamon, 1/8 teaspoon ground nutmeg, and 1/8 teaspoon salt. Toss gently to coat and let sit 10–15 minutes so the sugars and cornstarch begin to macerate the fruit.
Cook (optional for very juicy fruit)
For a thicker, less-runny filling, transfer fruit mixture to a medium saucepan and simmer over medium heat 3–5 minutes until it just starts to thicken and juices are glossy. Remove from heat and cool slightly. (If you prefer a raw fruit filling that will thicken in the oven, skip this step.)
Assemble in baking dish
Preheat oven to 375°F (190°C). Spoon the fruit and any juices into a 9-inch (23 cm) round or 8x8-inch square baking dish, spreading into an even layer. Dot the top with the 2 tablespoons unsalted butter cut into small pieces.

In a large bowl whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, 2 tablespoons granulated sugar, and 1/2 teaspoon salt until evenly combined.
Cut in butter
Add 1/2 cup (1 stick) cold unsalted butter cubes to the flour mixture. Using a pastry cutter, two forks, or your fingertips, cut the butter into the dry ingredients until the mixture resembles coarse crumbs with pea-sized pieces of butter remaining (about 8–10 strokes).
Wet ingredients
In a small bowl whisk together 3/4 cup buttermilk, 1 large egg, and 1 teaspoon vanilla extract. Pour the wet mixture into the flour–butter mixture and gently stir with a fork until a soft, slightly sticky dough forms. Do not overmix — there should still be small dry streaks or pea-sized butter bits.
Portion topping
Using a 1/4-cup scoop or two spoons, drop rounded spoonfuls of the biscuit dough over the fruit filling, leaving small gaps so steam can escape and juices bubble up between the biscuits. You can also pat the dough gently and cut into rounds to place, or spread and score for a more cobbler-pie look.
Finish topping
Brush the biscuit tops lightly with 1 tablespoon heavy cream and sprinkle with 1 tablespoon coarse sugar if desired. Place the assembled cobbler on a rimmed baking sheet to catch any bubbling juices.
Bake
Bake in the preheated 375°F (190°C) oven for 30–40 minutes, rotating the pan once halfway through, until the topping is golden brown and an inserted toothpick into the biscuit comes out with a few moist crumbs. Berries and peaches may bubble more; apples can take a few extra minutes if thicker slices were used — bake up to 45 minutes total if needed.
Cool
Remove cobbler from the oven and let rest 15–20 minutes so filling sets slightly. This makes serving cleaner and allows juices to thicken a bit more.
Finishing & serving
If desired, spoon any bubbling juices from the baking sheet back into the dish. Serve warm topped with scoops of vanilla ice cream or a dollop of whipped cream. Leftovers can be covered and refrigerated for up to 3 days; reheat individual portions in a microwave or warm in a 325°F (165°C) oven until warmed through.
