Method
Prep and assemble
Preheat and prepare bread
Preheat a nonstick skillet or griddle over medium heat (about 350°F / medium). Spread 1/2 tablespoon of softened butter evenly on the outside face of each bread slice. If using mustard or mayonnaise, spread the mustard/mayo thinly on the inside face of one or both slices now.
Layer sandwich
Place one slice of bread butter-side down on a plate or cutting board. Layer 4 slices of thinly sliced Dewig's ham evenly across the bread so they slightly overlap. Top the ham with 1 slice of cheese (or your chosen cheese). Add the remaining 4 ham slices on top of the cheese for extra ham coverage, then place the second slice of cheese atop the ham if you prefer cheesier interior. Finish by placing the second slice of bread butter-side up.
Grill sandwich
Flip and melt cheese
Carefully flip the sandwich and cook the second side for another 3–4 minutes. Reduce heat to medium-low if the bread is browning too quickly. To help the cheese fully melt, cover the pan with a lid for 1–2 minutes during the second side's cooking time.
Finish and rest
When both sides are golden and the cheese is melted, transfer the sandwich to a cutting board and let rest for 1 minute. If using pickles, place them inside before cutting or serve on the side. Season with a light twist of freshly ground black pepper if desired.
Serve
Cut the sandwich in half on the diagonal and serve hot. Offer extra mustard, mayonnaise, or pickles alongside.
