Form patties
Divide the ground beef into four equal portions (about 4 oz each) and gently form into thin patties about 4 inches in diameter and roughly 1/2 inch thick. Do not overwork the meat — press a shallow dimple in the center of each patty with your thumb to help them cook evenly.
Season patties
Sprinkle both sides of each patty evenly with salt, black pepper, and garlic powder just before cooking.
Cook patties
Heat a heavy skillet or griddle over medium-high heat until very hot (about 2–3 minutes). Add the vegetable oil and spread to coat. Place two patties on the griddle leaving space between them. Cook without moving for 2–3 minutes until a deep brown crust forms on the bottom. Flip and immediately top each patty with one slice of American cheese. Cook another 1–2 minutes until the cheese melts and the patties reach an internal temperature of 155–160°F (for medium-well). Remove and set on a plate. Repeat with remaining two patties.
Stack patties
For each burger, place one hot patty with melted cheese on the bottom bun, then top with the second hot patty and another slice of cheese so you have two cheesy patties stacked.

Prepare toppings
While the patties cook, thinly slice the red onion and tomato. Lightly shred the iceberg lettuce. Have pickle slices ready.
Assemble sauce
Mix the mayonnaise, ketchup, and mustard in a small bowl until combined. Taste and adjust to preference.
Assemble burgers
Spread a tablespoon of the sauce on the bottom toasted bun. Place the stacked double cheesy patties on the sauced bottom bun. Top with 4 pickle slices, a few rings of red onion, a tomato slice, and a small handful (about 1/4 cup) of shredded lettuce. Spread a thin layer of sauce on the top bun and place it on the burger.
Finish & Serve
Serve the double cheeseburgers immediately while hot with optional sides such as fries or a simple salad. If desired, cut the burger in half to make it easier to eat.
