Infuse and thicken

In a small saucepan, combine whole milk, heavy cream and shredded coconut. Warm gently over medium-low heat until it begins to steam (do not boil). Remove from heat and let steep for 10 minutes, stirring occasionally.

Strain the coconut-infused cream through a fine mesh sieve, pressing to extract as much liquid as possible; discard solids or save for garnish.

Return 1 cup of the infused cream to the saucepan. Whisk together sugar and cornstarch in a bowl; in a separate bowl, whisk egg yolks until smooth. Temper the yolks by whisking in a few tablespoons of the warm cream, then pour the yolk mixture back into the saucepan with the rest of the warmed cream.

Cook over medium-low heat, stirring constantly with a wooden spoon or spatula, until the mixture thickens enough to coat the back of a spoon (about 4–6 minutes). Remove from heat, stir in butter, vanilla and a pinch of salt. Transfer to a bowl, cover surface with plastic wrap to prevent a skin, and chill until cool (about 20–30 minutes).

Make the lemon curd base

In a small saucepan, whisk together lemon juice, lemon zest, 3 tablespoons sugar, cornstarch, egg yolk and 2 tablespoons water. Cook over medium heat, stirring constantly, until it thickens and becomes glossy (2–3 minutes). Remove from heat and let cool slightly.

Whip the meringue

In a clean bowl, beat the 2 egg whites with a pinch of cream of tartar until soft peaks form. Gradually add 2 tablespoons sugar and continue beating until glossy, stiff peaks form.

Fold about one third of the meringue into the warm lemon curd to lighten it, then gently fold in the remaining meringue until mostly combined — you want a fluffy lemon meringue mixture. Chill briefly (10 minutes) if needed before layering so it holds shape.

Chocolate-Pecan Crumble

Preheat oven to 350°F (175°C). On a small baking sheet, combine flour, cocoa powder, brown sugar and a pinch of salt. Cut in the cold cubed butter with a fork or pastry cutter until the mixture forms coarse crumbs. Stir in chopped pecans and mini chocolate chips.

Spread the crumble in a thin, even layer and bake 8–10 minutes until fragrant and slightly crisp. Remove and cool completely.

Apple-Cherry Compote

In a small saucepan over medium heat combine diced apple, cherries, sugar, lemon juice, water and a pinch of cinnamon. Cook, stirring occasionally, until the fruit softens and the mixture is saucy but still holds some texture, about 6–8 minutes. Remove from heat and let cool to room temperature.

Pumpkin Spice Swirl

In a small bowl, mix pumpkin puree, brown sugar, cinnamon, nutmeg and vanilla until smooth. Taste and adjust seasoning. Reserve for swirling into the coconut cream layer during assembly.

Assembly & Finish

Prepare 6 (4–6 oz) serving glasses or small bowls. Spoon about 1 tablespoon of apple-cherry compote into the bottom of each glass.

Spoon chilled coconut cream on top of the compote to about one-third of the glass height (about 2–3 tablespoons). Drop small dollops (about 1/2 teaspoon each) of the pumpkin spice mixture around the coconut cream surface and use a toothpick to swirl gently to create ribbons of pumpkin.

Add a layer of lemon meringue mixture (about 2–3 tablespoons) on top of the coconut/pumpkin layer. Sprinkle a tablespoon of the cooled chocolate-pecan crumble over the meringue for texture.

Repeat layering if your vessel allows: another thin coconut cream layer, a small swirl of pumpkin, a dusting of crumble and a final dollop of meringue on top.

If desired, brown the top meringue with a kitchen torch until lightly golden (about 10–20 seconds), or place under a very hot broiler for 30–45 seconds watching carefully.

Garnish with toasted coconut flakes, a few extra pecans or mini chocolate chips, and a mint leaf. If using, add a small spoonful of whipped cream beside the top meringue for richness.

Serve chilled or at cool room temperature. These parfait-style servings are best eaten within 24 hours; keep refrigerated if not serving immediately.
