Method
Chicken
Pound and slice
Trim any fat from the chicken breast and place between plastic wrap. Lightly pound with a meat mallet or rolling pin to 1/4–1/2 inch thickness for even cooking. Slice thinly across the grain into strips about 1/4 inch thick.
Season
In a small bowl combine salt, black pepper, garlic powder, and smoked paprika. Sprinkle evenly over both sides of the sliced chicken and rub gently so the seasoning adheres.
Cook
Heat 1 teaspoon olive oil in a large skillet over medium-high heat. Add the seasoned chicken slices in a single layer (work in batches if needed). Cook 2–3 minutes per side until golden and cooked through (internal temperature 165°F / 74°C). Remove cooked chicken to a plate and tent loosely with foil to keep warm.
Bacon
Bread and assembly
Grill the bread
Butter one side of each bread slice with about 1/2 tbs unsalted butter. Heat the same skillet used for chicken over medium heat. Place bread buttered-side-down into skillet and grill 1–2 minutes until golden and crisp. If you prefer, grill bread on a panini press. Remove from heat.
Dress the bread
Spread about 1 1/2 tbs ranch dressing evenly on the top side of one grilled slice and 1 1/2 tbs on the inside of the other slice (total 3 tbs).
Layer
On one dressed slice place the Swiss cheese slices so they cover the bread. Arrange the warm sliced chicken over the cheese in an even layer. Sprinkle chopped bacon evenly over the chicken. Add optional lettuce and tomato slices if using. Sprinkle chopped chives or green onions on top for brightness.
Melt and finish
If you want the cheese melted, return the assembled open-faced sandwich to the skillet, cover loosely with a lid for 30–60 seconds until the cheese softens, or place under a broiler for 1–2 minutes watching closely. Top with the other ranch-dressed bread slice, press gently, slice in half, and serve immediately.
