Ingredients for Meatball & Ravioli Malfatti

Method

Cooking Instructions

1

Prepare the Meatballs

In a large bowl, mix the ground beef, egg, breadcrumbs, minced garlic, salt, and black pepper until well combined. Form the mixture into small meatballs, about 1 inch in diameter.

2

Cook the Meatballs

In a large skillet, heat olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 8 minutes. Remove from skillet and set aside.

3

Make the Spinach-Ricotta Dumplings

In a separate bowl, combine ricotta cheese, chopped spinach, half of the grated Parmesan cheese, and salt. Mix until smooth. Form the mixture into small dumplings, about 1 inch in diameter.

4

Simmer the Ravioli and Dumplings

In the same skillet, add the pomodoro sauce and bring to a simmer. Add the cheese ravioli and spinach-ricotta dumplings. Cook for 5-7 minutes until the ravioli are tender.

5

Combine and Serve

Add the browned meatballs back into the skillet and gently stir to combine. Top with the remaining Parmesan, Romano, and mozzarella cheeses. Cover and cook for another 2-3 minutes until the cheese is melted. Serve hot.
