Caramel Apple Topping
Prepare the Caramel Sauce
In a saucepan over medium heat, melt the butter and brown sugar together. Stir until the mixture is bubbly and smooth. Add the heavy cream and cinnamon, and continue to stir until thickened, about 2-3 minutes.
Cook the Apples
Add the diced apples to the caramel sauce and cook for an additional 5-7 minutes, until the apples are tender and coated in caramel.
Assemble the Cheesecake
Once the cheesecake is fully chilled, top it with the caramel apples and sprinkle with toasted pecans. Serve slices with a dollop of whipped cream and garnish with fresh mint leaves.
