Prepare the Fritter Batter

In a large mixing bowl, combine the pimento cheese, flour, cornstarch, baking powder, salt, and black pepper. Mix well.

Add Wet Ingredients

In another bowl, whisk together the egg and milk. Gradually add the wet mixture to the dry ingredients, stirring until just combined.

Heat the Oil

In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fritters

Using a tablespoon, drop spoonfuls of the batter into the hot oil. Fry in batches, making sure not to overcrowd the pan. Cook for about 2-3 minutes on each side or until golden brown.

Drain and Serve

Remove the fritters from the oil and drain on paper towels. Serve warm with red pepper jelly on the side.
