Prepare the Pork

Trim excess fat from the pork shoulder and cut it into large chunks.

Mix the Marinade

In a large bowl, combine the orange juice, lime juice, cumin, oregano, chili powder, salt, black pepper, and minced garlic. Stir well to create a marinade.

Marinate the Pork

Add the pork chunks to the marinade and ensure they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Cook the Pork

In a slow cooker, place the marinated pork, chopped onion, bay leaves, and water. Cover and cook on low for 8 hours or until the pork is tender and easily shreds.

Shred the Meat

Once cooked, remove the pork from the slow cooker and shred it using two forks. Discard any large pieces of fat and the bay leaves.

Crisp the Carnitas

For added texture, spread the shredded pork on a baking sheet and broil in the oven for 5-7 minutes until crispy edges form.

Serve the carnitas in tacos, burritos, or as a main dish with your favorite sides.
