Pound Cake & Syrup
Prepare strawberries
Reserve 6 strawberry slices for garnish. Place remaining sliced strawberries into a medium bowl.
Make strawberry syrup: in a small saucepan combine 1/2 cup granulated sugar, 1/4 cup water and 1 tablespoon lemon juice. Bring to a gentle simmer over medium heat, stirring until sugar dissolves (about 2–3 minutes). Add half of the sliced strawberries (about 1 cup) to the pan and simmer 2–3 minutes more until berries soften and the liquid thickens slightly. Remove from heat and let cool 5 minutes, then press the softened berries through a fine mesh strainer or mash lightly with a fork to make a chunky syrup. Stir in 1 tablespoon coffee liqueur. Reserve the remaining fresh strawberry slices (do not cook) for layering and garnish.
Soak cake slices: place 4–6 slices of marble pound cake on a shallow plate or baking sheet. Spoon or brush the warm strawberry syrup over each cake slice, using about 2–3 tablespoons syrup per slice so the cake is moist but not falling apart. Let soaked slices rest 3–5 minutes to absorb syrup. Save any remaining syrup for drizzling.
Optional coffee-laced drizzle: stir the remaining 1 tablespoon coffee liqueur into any leftover syrup (or keep separate) to drizzle over finished shortcakes.
Whipped Cream
Chill equipment: place a mixing bowl and beaters in the refrigerator for 10 minutes if possible (helps cream whip faster).
Make whipped cream: pour 1 cup cold heavy cream into the chilled bowl. Add 2 teaspoons powdered sugar and 1/2 teaspoon vanilla extract. Whip with an electric mixer on medium-high speed until soft peaks form (about 2–3 minutes). Take care not to overwhip; stop when peaks hold but still look glossy.
Assembly & Garnish
Assemble layered shortcakes for 2–4 servings: For individual servings, use 2–3 soaked cake slices per serving. Place one soaked slice on a dessert plate or shallow bowl, spread a generous spoonful (about 3 tablespoons) of whipped cream over the cake, then top with a layer of fresh uncooked strawberry slices (about 3–4 slices). Repeat with a second soaked cake slice and another spoonful of whipped cream to create two layers. For a taller single presentation use three slices and two layers of cream/strawberries.
Finish and garnish: Spoon or pipe a final dollop (about 2 tablespoons) of whipped cream on top. Drizzle about 1 teaspoon coffee liqueur (or coffee-laced syrup) over the cream and strawberries per serving. Sprinkle chopped pistachios (about 1/2 tablespoon per serving) over the top and place the reserved whole strawberry slices decoratively.
Serve immediately: serve within 15 minutes of assembly so the cake retains some texture. If making ahead, keep components separate (soaked cake and whipped cream chilled) and assemble within 30 minutes of serving.
