Wash and dry
Rinse all berries, grapes, and stone fruit under cold water in a colander. Gently pat dry with a clean kitchen towel or paper towels to remove excess moisture so fruit doesn't make the platter soggy.
Prepare strawberries
Hull strawberries and halve (or quarter if large) so they are bite-sized. Set aside.
Prepare grapes and berries
Remove grapes from stems and discard any damaged pieces. Keep blueberries, blackberries/raspberries whole.
Prepare pineapple
If using whole pineapple, cut off top and bottom, remove skin and eyes, then cut into bite-sized chunks or spears about 1-inch thick. If using pre-cut, arrange directly.
Prepare kiwi, apple, and stone fruit
Peel and halve or slice kiwi into rounds or wedges. Core and thinly slice apple, then toss slices with a small squeeze of the halved lemon to prevent browning. Slice peach or nectarine into wedges.
Garnish & Extras
If using toasted coconut flakes, toast them in a dry skillet over medium heat for 2–3 minutes, stirring constantly, until golden and fragrant. Let cool.
If using pomegranate arils, remove by cutting pomegranate in half and tapping the back of each half with a wooden spoon over a bowl to release arils, or peel and pick them out carefully.
Prepare drizzle: if using honey or agave, place in a small bowl. Add a teaspoon of lemon juice and stir to loosen for easier drizzling (skip lemon for strict vegan if using honey).
Lightly bruise or clap mint leaves between your palms to release aroma and set aside whole or roughly chiffonade a few for sprinkling.
Assembly & Serving
Choose a large platter or wooden board. Start by placing the largest items first (pineapple chunks/spears and sliced stone fruit) spaced apart to create visual anchors.
Arrange groups of fruit by color and shape: cluster strawberries, blueberries, blackberries/raspberries, green and red grapes in small mounds so guests can easily pick. Fan apple slices and kiwi rounds; nestle them between the clusters.
Fill gaps with smaller fruits like blueberries, blackberries, and pomegranate arils to create contrast and fill negative space for a full look.
Tuck mint leaves into groups across the platter for pops of green and aroma. Sprinkle toasted coconut flakes and lemon zest lightly over appropriate areas (avoid overdoing — a light scattering is best).
If desired, lightly drizzle agave or honey over denser fruit clusters (like pineapple and stone fruit) using a spoon for a delicate sheen. Serve the remaining drizzle in a small bowl alongside for guests.
Place small skewers or toothpicks in a corner or insert into larger fruit pieces for easy grabbing. Serve immediately at room temperature for best flavor and texture.
