Preheat and prep
Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or lightly oil it. Pat the salmon fillets dry with paper towels; this helps the topping adhere and promotes even browning.
Season the flesh side of each salmon fillet with about 3/4 teaspoon kosher salt and a pinch of freshly ground black pepper (adjust total to taste). Drizzle about 1/2 tablespoon olive oil over the top of each fillet and rub gently to coat. If skin-on, place fillets skin-side down on the prepared sheet.
Zest the lemon and cut into wedges for serving. Reserve the lemon zest and juice for the oreganata topping.

Combine 1 cup fresh breadcrumbs, 1/4 cup grated Parmigiano-Reggiano, 2 tablespoons chopped fresh oregano, 2 tablespoons chopped parsley, 3 minced garlic cloves, 1 teaspoon lemon zest, 1 tablespoon lemon juice, 3 tablespoons olive oil, 1/4 teaspoon red pepper flakes, 1/2 teaspoon coarse salt, and 1/2 teaspoon freshly ground black pepper in a bowl. Stir until mixture is evenly moistened and holds together slightly when pressed. Adjust seasoning to taste.
If you prefer a slightly crispier, golden top, toast the breadcrumb mixture in a dry skillet over medium heat for 3–4 minutes, stirring frequently, until fragrant and lightly browned; let cool slightly before using.
Pile an even amount of the oreganata topping onto the flesh side of each salmon fillet, pressing gently so it adheres and forms a compact layer about 1/4–1/2 inch thick. Do not cover the skin.

Place the baking sheet in the preheated oven on the middle rack. Bake for 10–14 minutes, depending on thickness: aim for an internal temperature of 125–130°F (52–54°C) for medium-rare to medium, or 135°F (57°C) for medium-well. The topping should be golden and the salmon just opaque inside. If topping needs more browning, switch the oven to broil for 1–2 minutes while watching carefully to avoid burning.
