Wipe the portobello caps clean with a damp paper towel. Remove and discard the stems. If desired, gently scrape out the dark gills with a spoon to reduce moisture and prevent a muddy flavor.
Breading Station
Place breaded caps on a wire rack or a plate and let them rest 5–10 minutes to set the coating. This helps it adhere during frying.
Frying & Finishing
Pour vegetable oil into a large skillet to reach about 1/8–1/4 inch depth and heat over medium heat until shimmering and a breadcrumb dropped in sizzles (approximately 325–350°F if using a thermometer).
Add the breaded caps, cooking in batches if needed. Fry until golden brown, 3–4 minutes per side. Use tongs to gently press for even contact. Adjust heat as necessary to avoid burning the crust; reduce heat if browning too quickly.
Preheat oven broiler to medium-high (or oven to 425°F / 220°C if you prefer baking). Place caps on a baking sheet or ovenproof skillet, top each cap with ~2–3 tablespoons marinara sauce (spread to cover), then sprinkle ~1/3 cup shredded mozzarella across the three caps (divide evenly).
Broil or bake until the cheese melts and bubbles and the edges brown slightly, about 2–5 minutes under a broiler (watch carefully) or 8–10 minutes at 425°F.
Remove from oven and let rest 1–2 minutes. Garnish with fresh basil leaves torn over the top and a light sprinkle of extra grated Parmesan if desired. Serve hot.
