Prep and macerate

Hull and quarter the strawberries. Place 1 cup strawberries in a small bowl with 2 tablespoons granulated sugar and 1 teaspoon fresh lemon juice. Toss and let sit 10 minutes to macerate and draw out juices.

Purée: Transfer macerated strawberries (including juices) to a blender or food processor. Blend until slightly chunky but spreadable — about 5–8 seconds for crushed texture. If mixture is too thick, add up to 2 tablespoons cold water and pulse once or twice to loosen.

Optional strain: For a smoother syrup, press purée through a fine mesh strainer into a small bowl using the back of a spoon; discard seeds. For an Italian soda-style drink, leaving small fruit pieces gives better texture.

Homemade Lemonade

Make simple lemon base: In a heatproof measuring cup or small pitcher, combine 1/2 cup granulated sugar with 1/4 cup hot water. Stir until sugar dissolves completely to make a syrup (about 1–2 minutes). Let cool for 2–3 minutes.

Juice lemons until you have 3/4 cup (about 3–4 medium lemons). Strain seeds. Add the fresh lemon juice to the cooled sugar syrup and stir to combine.

Add 2 cups cold water to the lemon-syrup mixture and stir. Taste and adjust: if too strong, add up to 1/2 cup more cold water; if not sweet enough, stir in 1–2 teaspoons sugar. Chill briefly if desired.

Optional: Add 2 cups ice to the pitcher to quickly cool and slightly dilute to serving temperature.

Assembly & Garnish

Glass preparation: Fill a tall glass (about 16–20 oz) with 1 cup crushed ice (or ice chips). Reserve a few whole ice cubes if preferred for topping.

Add strawberry layer: Spoon 2–3 tablespoons of the crushed strawberry purée into the bottom of the glass (more for a sweeter, more vibrant drink). Gently muddle the purée into the ice with the back of a spoon for even distribution if desired.

Add lemonade: Pour 1 cup of the prepared homemade lemonade over the ice and strawberry purée. Leave room at the top for sparkling water.

Top with fizz: Slowly pour 1 cup chilled club soda or sparkling water over the back of a spoon onto the lemonade to create a layered look and preserve some carbonation.

Final stir and garnish: Give the glass 1–2 gentle stirs to combine the strawberry and lemonade but maintain some swirls. Garnish with 2 lemon slices, 2 strawberry halves on the rim, and 3–4 mint leaves. Serve immediately with a straw.

Scaling / make-ahead notes: To prepare a small pitcher for 4 servings, multiply ingredient quantities by 4 (purée 4 cups strawberries with 8 tbs sugar, make lemonade with 3 cups lemon juice, 2 cups syrup, etc.), keep club soda separate until serving to preserve fizz.
