Cook peppers & onions
Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add sliced onions and both bell peppers. Sauté, stirring occasionally, until softened and beginning to caramelize, about 8–10 minutes. Season lightly with a pinch of salt. Transfer vegetables to a plate and keep warm.
Sear steak
Add remaining 1 tablespoon olive oil to the same skillet and increase heat to high. Add the seasoned steak slices in a single layer (work in two batches if necessary to avoid steaming). Sear without moving for 30–45 seconds, then stir and continue cooking until browned but still tender, about 1–2 minutes total per batch. Return peppers and onions to the skillet with the steak, toss to combine and cook 30 seconds to marry flavors.
Garlic Bread Hero
Prepare garlic butter
Preheat oven broiler (or oven to 425°F / 220°C). In a small bowl, combine softened butter, minced garlic, chopped parsley, grated Parmesan and 1 teaspoon olive oil. Mix until smooth.
Toast roll
Slice the hoagie roll lengthwise, leaving a hinge if preferred. Spread garlic butter evenly on both cut sides. Place cut sides up on a baking sheet and broil 2–4 minutes until golden and fragrant (watch closely). Alternatively, bake at 425°F for 6–8 minutes until golden. Remove from oven.
Assembly & Cheese Melt
Place the sandwich open under the broiler for 30–60 seconds to fully melt the cheeses (optional). Remove from oven, place remaining provolone slices on top if you prefer double cheese, then close the hero and press gently.
To Serve
Slice the hero into portions (serves 2–3). Serve immediately with a side Caesar or mixed green salad. Offer red pepper flakes and pickled peppers on the side.
