OLD FASHIONED

Add the Graham's 6 Grapes Ruby Port, dry sherry, fresh lemon juice, simple syrup and Angostura bitters into a mixing glass or cocktail shaker. Fill the mixing glass with ice (about 1 cup) to chill and slightly dilute the drink.

Combine and chill

Stir the mixture briskly for 20–30 seconds with a bar spoon (or shake gently if you prefer a slightly aerated texture). The goal is to chill the cocktail and achieve mild dilution without overly aerating the fortified wines.

Stir

Fine-strain the chilled mixture into a chilled Nick & Nora or coupe glass (or a small rocks glass if you prefer). Use a julep or Hawthorne strainer to remove ice and any small solids.

Strain and serve

Express the orange twist over the glass to release the oils, run it around the rim then drop it into the cocktail. Skewer two red grapes on a short pick or place them on the rim as a complementary garnish.
