Method

Prepare Herbed Olive Oil

In a small bowl combine extra-virgin olive oil, fresh lemon juice, minced garlic, chopped parsley, chopped oregano or thyme and red pepper flakes (if using). Whisk until emulsified and season with a pinch of kosher salt and a small grind of black pepper. Set aside to allow flavors to infuse (5–10 minutes).

Prepare Sandwich Components

Slice and drain mozzarella

If the fresh mozzarella is packed in liquid, drain it on paper towels for 5 minutes, then slice into 1/4-inch (6–7 mm) rounds. Pat lightly to remove excess moisture to avoid a soggy roll.

Slice tomato and onion

Slice the tomato into 1/4-inch rounds. If using red onion, cut into very thin rings. Lightly season tomato slices with 1/8–1/4 tsp kosher salt and a small grind of black pepper; let sit 1–2 minutes to draw out juices.

Prepare roll

Carefully split the Italian hero roll lengthwise, leaving a small hinge if desired. If you prefer a lightly toasted roll, brush the cut sides very lightly with olive oil and toast face-down in a skillet over medium heat 1–2 minutes until just golden. Remove and let cool slightly.

Assemble Sandwich

Brush with herbed oil

Brush or spoon about half of the herbed olive oil onto the cut face of the bottom half of the roll and a little on the top half (reserve remaining oil for finishing).

Layer cheese and prosciutto

Arrange the mozzarella slices evenly on the bottom half of the roll so they slightly overlap. Drape the prosciutto slices over the mozzarella in folded ribbons to create even coverage (use all ~3 oz).

Add tomato and basil

Place the seasoned tomato slices over the prosciutto, then tuck fresh basil leaves between tomato slices and on top, distributing the 8 leaves evenly. If using red onion, scatter a few thin rings sparingly to avoid overpowering.

Finish and serve

Drizzle the remaining herbed olive oil over the assembled sandwich and sprinkle the remaining 1/8 tsp kosher salt and a grind of black pepper across the top. Close the sandwich, press lightly to compact, then cut in half on a diagonal. Serve immediately with your choice of Caesar or mixed green salad on the side.
