Syrup & Base
Build the base
Add 1.5 tbs vanilla syrup to a chilled 12–16 oz glass (or serving vessel). Pour in 3 oz fresh orange juice and 1.5 oz half-and-half. Stir gently with a bar spoon 6–8 times to combine the syrup, orange juice and cream into a uniform creamy base.
Add ice
Fill the glass with 4 ice cubes, leaving about 3/4 inch of headspace for soda and whipped cream.
Finish & Garnish
Prepare whipped cream
In a small chilled bowl, whip 2 oz heavy cream with 0.5 tsp powdered sugar until soft peaks form (about 1–2 minutes with a handheld whisk or 30–60 seconds with a hand mixer). Do not overwhip; aim for a smooth, slightly billowy whipped cream.
Top the drink
Spoon or pipe the whipped cream on top of the soda-topped glass, creating a dome about 1/2–3/4 inch high.
Garnish & finish
Grate a little orange zest over the whipped cream (about 1/4 tsp) and place an orange slice on the rim. Serve immediately with a straw and a long spoon so the drink can be stirred or eaten like a float.
