Prep the roll
Slice the 12-inch hero roll lengthwise, leaving a small hinge if preferred. Lightly hollow or remove a bit of soft interior if you want room for fillings.
Make quick dressing
In a small bowl whisk together 2 tbsp extra-virgin olive oil, 1 tsp red wine vinegar, 1/2 tsp Italian seasoning, 1/4 tsp kosher salt and 1/4 tsp freshly ground black pepper. Taste and adjust seasoning. This will lightly dress the peppers and lettuce.
Dress the roasted peppers
Place drained roasted red pepper strips in a small bowl and toss with 1 tbsp of the olive oil-vinegar dressing. Let sit for 2–3 minutes to absorb flavor.
Assemble meats and cheese
Open the roll and, on the bottom half, layer the provolone slices first to create a moisture barrier (helps keep the bread from getting soggy). Then fold and layer the Genoa salami, mortadella, and prosciutto evenly along the length of the roll, slightly overlapping to cover the sandwich.
Add vegetables and condiments
Arrange the dressed roasted peppers over the meats. Place tomato slices evenly on top of the peppers. Scatter the shredded lettuce over the tomato. If using, add thin rings of red onion. Spread mayonnaise and Dijon mustard on the top half of the roll (or brush with remaining dressing if preferred).
Finish and press
Close the sandwich and press gently to compact the layers. If available, wrap the sandwich tightly in parchment paper and let it rest for 5–10 minutes so flavors meld. Cut into 2–3 portions with a serrated knife to serve.
Sides (Caesar or Mixed Green Salad)
Caesar side
Place 3 cups chopped romaine in a bowl. Add 3 tbsp Caesar dressing and toss until evenly coated. Sprinkle 2 tbsp shaved Parmesan and 1/4 cup croutons on top. Serve alongside sandwich.
Mixed green side
Place 3 cups mixed salad greens in a bowl. Add halved cherry tomatoes and sliced cucumber. Drizzle 1 tbsp simple vinaigrette (or the remaining olive oil-vinegar dressing) and toss gently. Taste and adjust with a pinch of salt and pepper. Serve alongside sandwich.
