Rinse clams under cold running water to remove grit. Discard any with cracked shells or that do not close when tapped. Place clams in a large bowl with cold water and 2 tsp coarse salt; let sit 20–30 minutes to purge sand. Drain and rinse again.

Prepare an ice bed: fill a large shallow platter or serving tray with crushed ice (about 4 cups) and a couple of handfuls of ice cubes to keep cold. Arrange clams on the half shell after shucking (see next steps). Keep chilled in refrigerator until plating.

Shucking (to place clams on the half shell)

Tools & Safety

Use a short, sturdy oyster knife and a towel or glove to protect your hand. Work on a stable surface.

Hold the clam flat-side up with the hinge pointing toward you. Insert the tip of the knife into the hinge and twist gently until it pops. Run the blade along the top shell to cut the adductor muscle and remove the top shell. Tip the clam so the liquor (liquid) stays in the bottom shell, and run the knife under the meat to free it from the bottom shell while keeping it attached to present on the half shell.

If a few clams are tightly closed and won't open when shucked, steam them 2–3 minutes until they pop open. Discard any that remain closed.

Mignonette (make ahead)

Combine 3 tbs red wine vinegar, 1 tbs champagne vinegar, 2 tbsp finely minced shallot, 1 tsp freshly ground black pepper, 1 tsp sea salt and 1 tsp granulated sugar (if using) in a small bowl. Stir to dissolve salt and sugar. Taste and adjust acidity or salt. Cover and refrigerate at least 15 minutes to let flavors meld; can be made up to 24 hours ahead.

Garnishes & Plating

Place the platter of crushed ice on the serving table. Arrange chilled half-shell clams on the ice, spacing them so each sits level with a little of its liquor in the shell.

Spoon about 1/2 to 1 tsp mignonette onto each clam (or serve mignonette in a small bowl for guests to add). Sprinkle a tiny pinch of chopped parsley over each for color. Place lemon wedges and cocktail sauce alongside for guests.

Keep the platter on ice and serve immediately. Discard any uneaten raw clams after 2 hours at chilled temperature.

Optional Hot Topping (serve warm)

If offering a warm garlic-butter topping: melt 3 tbs unsalted butter in a small skillet over medium heat. Add 1 tsp minced garlic and sauté 30–45 seconds until fragrant (do not brown). Add 2 tbs dry white wine and 0.25 tsp red pepper flakes if using; simmer 30–60 seconds to reduce slightly. Stir in 1 tsp chopped parsley and remove from heat.

To serve hot: spoon about 1 tsp of the warm butter mixture over opened clams on half shells and broil 1–2 minutes (optional) until the butter is bubbling and edges just begin to brown. Serve immediately on a warm bed (not ice) if using hot topping.
