Mix base

Add 2 tbs Aperol, 1 oz fresh blood orange juice, 0.5 oz fresh lemon juice and 0.5 tsp simple syrup to a mixing glass or cocktail shaker filled with a few ice cubes.

Short shake

Shake briskly for 8–10 seconds—just enough to chill and slightly dilute the mixture. This preserves effervescence when topped with Prosecco.

Build & Sparkle

Prepare glass

Fill a chilled highball or large wine glass with 4 large ice cubes (or enough to nearly fill the glass).

Strain and top

Double-strain the shaken cocktail into the prepared glass over the ice to remove pulp and shards. Immediately top with 3 oz chilled Prosecco and then gently add 1 oz chilled soda water. Stir very gently once with a bar spoon to combine without flattening the bubbles.

Garnish & Finish

Express the oils of a lemon twist over the drink if using, discard or drop into the glass as desired. Float or place a blood orange wheel on the rim or inside the drink for visual impact. Serve with a short straw and a cocktail napkin.
