Preparation
Chill glass
Place a rocks glass in the freezer for 5 minutes or fill with ice to chill while you prepare the espresso.
Brew espresso
Pull a fresh double shot (about 2 oz) of hot espresso using an espresso machine. Use freshly ground beans for best flavor. Serve immediately so it is hot and aromatic.
Assembly
Discard any ice used to chill the glass, then add 3 large ice cubes to the chilled rocks glass.
Pour 1 oz Borghetti espresso liqueur over the ice.
Add the hot double-shot espresso (2 oz) directly into the glass over the liqueur and ice. The temperature contrast will create gentle mixing and release aroma.
Add a 1/4 oz (a splash) of your chosen fortified spirit: either Candolini grappa for a warm grape brandy accent or Sambuca for an anise-scented finish. Pour slowly so the spirits layer briefly before merging.
Stir gently once with a bar spoon (about 3 slow turns) to integrate the liqueur, espresso, and spirit while keeping the drink cold but allowing some crema to remain on top.
Garnish & Serve
Express an orange twist over the glass (optional) to add citrus oils, then drop it in or discard according to preference.
Serve immediately while cold on the rocks with a small demitasse spoon for sipping and note that the drink will have a contrast of hot espresso aroma and chilled body.
