Prepare Glass

Chill and fill

Chill a tall glass (12–16 oz) in the freezer for 5–10 minutes if desired. Add 1 cup of ice to the glass, leaving room at the top for foam and whipped cream.

Build the Soda

Add syrups and cream

Pour 1.5 tablespoons black cherry syrup into the ice-filled glass. Add 1 ounce heavy cream and 1 teaspoon vanilla extract. If you prefer a lighter sweetness, add 1 ounce cold club soda instead of an equal amount of Sprite when topping up (optional).

Combine gently

Stir the syrup and cream together gently with a long spoon or bar spoon to integrate. Do not over-stir — you want the cream slightly emulsified with the syrup but still able to create a cloud when the soda is added.

Top with soda

Slowly pour 10 ounces of cold Sprite (or lemon-lime soda) down the side of the glass to preserve carbonation and encourage a layered, creamy effect. If using the optional club soda, pour 9 ounces Sprite and 1 ounce club soda instead.

Finish & Garnish

Lightly stir once or twice to marry the flavors (optional). Top the soda with 2 tablespoons of prepared whipped cream, creating a cloud on top of the drink. Finish by placing 1 maraschino cherry or fresh black cherry on the whipped cream.

Serve immediately with a straw and long spoon. Encourage the drinker to stir the whipped cream into the soda for a creamier Italian soda experience.
