Method
Mozzarella Cheese
Prepare cheese
Measure 2 cups shredded low-moisture mozzarella. If using fresh mozzarella, drain and pat dry, then shred or slice thinly to equal about 2 cups.
Toss the shredded mozzarella with 1 tablespoon olive oil, 1/4 teaspoon salt and a pinch (1/8 teaspoon) black pepper to season and prevent clumping. Keep covered at room temperature if assembling immediately, or refrigerate briefly and bring to cool room temperature before adding to the hero.
Sautéed Mushrooms
Cook mushrooms
Heat a large skillet over medium-high heat. Add 1 tablespoon unsalted butter and 1 teaspoon olive oil. When butter melts and begins to foam, add the sliced mushrooms in a single layer. Let them cook undisturbed for 2–3 minutes to brown, then stir and continue to sauté for another 3–4 minutes until golden and most of their moisture has evaporated.
Finish
Add the minced garlic and 1/2 tsp thyme in the last 30–45 seconds and stir until fragrant. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Remove from heat and let cool slightly before adding to the hero so excess moisture does not sog the bread.
Peppers & Onions
Slice vegetables
Thinly slice 1 cup yellow onion, 1 cup green bell pepper and 1/2 cup red bell pepper (if using). Separate into strips so they cook evenly.
Sauté peppers and onions
Heat a skillet over medium heat and add 1 tablespoon olive oil. Add the sliced onions and peppers and cook, stirring occasionally, for 6–8 minutes until softened and beginning to caramelize. If you prefer softer and sweeter, cover and steam for an additional 2–3 minutes, then uncover and cook off excess moisture.
Season
Season with 1/2 teaspoon salt, 1/4 teaspoon black pepper and 1/4 teaspoon red pepper flakes (optional) during the last minute of cooking. Stir to combine and remove from heat. Let cool slightly before layering into the hero to avoid soggy bread.
