Preparation and Cooking
Marinate the Wings
In a large bowl, combine chicken wings, minced garlic, chopped rosemary, olive oil, salt, and black pepper. Mix well to coat the wings evenly. Cover and refrigerate for at least 1 hour, preferably overnight.
Prepare the Spicy Sauce
In a saucepan over medium heat, melt the butter. Once melted, stir in lemon juice, red pepper flakes, and chopped parsley. Simmer for 2-3 minutes, then remove from heat.
Fry the Wings
Heat a large skillet over medium-high heat. Add a little olive oil. Remove wings from marinade and place them in the skillet in a single layer. Cook for about 8-10 minutes on each side or until they are golden brown and cooked through.
Toss in Sauce
Once wings are cooked, transfer them to a large bowl. Pour the spicy lemon & butter herb sauce over the wings and toss to coat evenly.
Prepare the Dipping Sauce
In a small bowl, mix together crumbled gorgonzola cheese, sour cream, mayonnaise, and lemon juice until smooth. Adjust seasoning if needed.
Serve
Serve the spicy scarpariello wings hot with gorgonzola dipping sauce on the side.
