Preparation
Make the Ravioli Dough
In a large mixing bowl, combine the flour and salt. Make a well in the center and add the eggs. Mix until it forms a dough. Knead on a floured surface for about 8-10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.
Prepare Cheese Filling
In a bowl, mix ricotta, mozzarella, parmesan, black pepper, and fresh basil until well combined. Set aside.
Roll Out Dough
After resting, divide the dough into 4 pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin.
Assemble Ravioli
Place small spoonfuls of cheese filling onto one sheet of dough, spacing them out evenly. Moisten the edges with water, then place another sheet of dough on top. Press down to seal, and cut out ravioli shapes using a cutter or knife.
Cook Ravioli
Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes until they float to the surface. Remove and drain.
Serve with Sauce
Serve the cooked ravioli with your choice of slow-cooked ragu sauce or marinara sauce. Garnish with additional parmesan cheese and basil if desired.
