Prepare the Chicken
Season the chicken thighs with salt and black pepper.
Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the chicken thighs skin-side down and sear for 5-7 minutes until golden brown. Flip and sear the other side for an additional 5 minutes. Remove from skillet and set aside.
Add Broth and Herbs
Add chicken broth, thyme, rosemary, and bay leaf to the skillet. Stir well to combine.
Simmer the Chicken
Return the seared chicken thighs to the skillet, skin-side up. Bring to a simmer, cover, and cook for 30-35 minutes until the chicken is cooked through.
Thicken the Sauce
In a small bowl, mix cornstarch and water until smooth. Stir the cornstarch mixture into the skillet and cook for an additional 5 minutes until the sauce thickens.
Serve
Remove the bay leaf and serve the chicken with the vegetables and sauce over rice or mashed potatoes.
