Prepare the Chicken
Season the chicken thighs with salt and black pepper on both sides.
Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the chicken thighs, skin side down, and sear until golden brown, about 5-7 minutes. Flip and cook for another 5 minutes. Remove the chicken and set aside.
Sauté the Vegetables
In the same skillet, add the chopped onion, bell pepper, and minced garlic. Sauté until the onion is translucent, about 3-4 minutes. Add zucchini and cherry tomatoes, cooking for another 3 minutes.
Combine and Simmer
Return the chicken to the skillet. Pour in the chicken broth and sprinkle with dried oregano. Bring to a simmer, then cover and reduce heat to low. Let it cook for 25-30 minutes, or until the chicken is cooked through.
Finish and Serve
Stir in chopped fresh basil before serving. Adjust seasoning with additional salt and pepper if needed. Serve hot.
