Pico de gallo

Finely dice the roma tomato and onion. Mince the cilantro and jalapeño if using.

Combine tomato, onion, cilantro, jalapeño, lime juice and 1/8 tsp salt in a small bowl. Stir, taste, and adjust salt or lime. Set aside to allow flavors to meld while preparing the omelette.

Vegetable filling

Clean mushrooms with a damp towel and slice thinly. Thinly slice the pasilla pepper, and finely chop the onion and mince the garlic.

Heat 1 tsp olive oil in a nonstick skillet over medium heat. Add the chopped onion and sauté 1–2 minutes until translucent.

Add sliced mushrooms and cook 3–4 minutes until they release moisture and begin to brown.

Add sliced pasilla pepper and minced garlic; cook 1–2 minutes until pepper softens and garlic is fragrant.

Add spinach and cook just until wilted, about 30–45 seconds. Season the vegetable mixture with a pinch of salt and a few grinds of black pepper. Transfer vegetables to a plate and wipe the skillet lightly with a paper towel.

Omelette assembly & cooking

In a bowl, crack 3 eggs. Add 2 tbsp milk, 1 tsp salt, and 1/4 tsp black pepper. Whisk thoroughly until blended and slightly frothy.

Return the skillet to medium-low heat and add 1 tbsp butter. Swirl to coat and let the butter foam but not brown.

Pour the beaten eggs into the skillet and let sit undisturbed for 10–15 seconds until the edges begin to set.

Using a spatula, gently push the set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Continue until the top is still slightly runny but mostly set, about 1–2 minutes.

Evenly distribute the cooked vegetable filling across one half of the omelette. If using, sprinkle chopped cooked bacon and grated cheese over the vegetables.

Using the spatula, fold the empty half of the omelette over the filled half. Cook 30–60 seconds more to melt cheese and finish cooking, keeping the interior tender.

Slide the omelette onto a plate seam-side down and rest 30 seconds.

To serve

Spoon pico de gallo over or alongside the omelette. Garnish with extra cilantro if desired.

Serve immediately while hot.
