Omelette Base

Crack the eggs into a medium bowl. Add the milk, salt, and pepper. Whisk until homogenous and slightly frothy, about 20–30 seconds.

Pour the beaten eggs into the skillet. Let eggs set briefly at the edges (15–20 seconds), then gently pull the cooked edges toward the center with a heatproof spatula, tilting the pan so uncooked egg runs to the edges. Repeat until the surface is mostly set but still slightly moist, about 1–2 minutes total.

Scatter the chosen protein evenly over one half of the omelette when the eggs are mostly set (see previous step).

Spoon the pico de gallo (drain any excess liquid first) over the protein layer. Sprinkle both shredded cheeses evenly over the pico and protein so the cheese will melt as the omelette finishes cooking.

Using the spatula, fold the empty half of the omelette over the filling to make a half-moon. Let cook 30–45 seconds more so the cheese melts through and the center finishes setting but remains tender.

Warm the cooked rice and black beans (in microwave or on stovetop). Place rice on the plate beside the omelette, spoon beans next to rice, and serve with a lime wedge to squeeze over the beans or pico as desired.

Add the diced onion, smoked paprika, and salt. Continue to cook until potatoes are tender and onions are translucent and slightly caramelized, another 4–6 minutes. Transfer potatoes to a plate and serve alongside the omelette.

If serving fruit: arrange mixed fresh fruit in a small bowl or on the plate beside the omelette. No cooking required—serve chilled or at room temperature.

Taste and adjust seasoning with additional salt or pepper if needed. Serve immediately while omelette is warm and cheese is melty.
