Method
Prepare Glass
Chill and rim
If desired, chill the serving glass in the freezer for 5–10 minutes. Run a lime wedge around the outside rim of the glass (or the inside lip depending on glass shape). Pour the salt onto a small plate, then press and twist the moistened rim into the salt until evenly coated. Set the glass aside.
Build Cocktail
Combine ingredients
Add the reposado tequila (2 oz), fresh lime juice (0.75 oz), and agave syrup (0.5 oz) to a cocktail shaker.
Add ice and shake
Fill the shaker with 6 ice cubes. Secure the lid and shake vigorously for about 12–15 seconds until the outside of the shaker is well chilled and slightly frosted.
Strain and serve
Add fresh ice to the prepared (salt-rimmed) serving glass (about 1 cup). Double-strain the shaken cocktail into the glass using a Hawthorne strainer and, if available, a fine mesh strainer to remove small ice shards and pulp.
Garnish
Express a lime wedge over the drink (squeeze briefly to release oils), drop it into the glass or place it on the rim as garnish.
