Select ripe Moscato grapes from small vineyards in Castiglione, ensuring they are free of blemishes and fully mature.

Harvesting

Gently crush the grapes to release their juice, using either a grape crusher or by hand. Collect the juice in a sanitized fermentation vessel.

Crushing

Add filtered water to the crushed grape juice. Stir in the granulated sugar until fully dissolved.

Mixing Ingredients

Sprinkle the champagne yeast over the juice mixture and stir gently to combine. Cover the vessel with a clean cloth.

Adding Yeast

Allow the mixture to ferment at a controlled temperature (around 18-20°C) for 7-10 days, stirring occasionally.

Fermentation

After fermentation, add the peach and apricot purees to the wine mixture and stir gently to blend the flavors.

Adding Flavors

Carefully siphon the wine into sterilized 375ml bottles, leaving some space at the top. Seal the bottles with corks.

Bottling

Allow the bottled wine to carbonate for an additional 2-3 weeks at a cool temperature.

Carbonation

Once carbonated, chill the bottles in the refrigerator for at least 24 hours before serving.
