In a mixing bowl, combine the ricotta cheese, spinach (cooked and drained), grated parmesan cheese, egg, salt, and black pepper. Mix well until smooth and creamy.

Prepare the Filling

Preheat your oven to 375°F (190°C). Take a pasta sheet, place a generous spoonful of the filling at one end, roll it up tightly, and place it seam-side down in a baking dish. Repeat with the remaining sheets.

Assemble the Rollati

Pour the marinara sauce evenly over the assembled rollati. Drizzle with olive oil for added richness.

Add Sauce

Cover the baking dish with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until golden and bubbly.

Bake

In a small bowl, mix together rosemary, mint, minced garlic, salt, and black pepper. Rub this mixture all over the chicken breasts.

Season the Chicken

In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for about 5 minutes on each side until golden brown.

Sear the Chicken

Transfer the skillet to the preheated oven (375°F/190°C) and roast for 20-25 minutes, or until the chicken is cooked through and juices run clear.
